The master artisan who creates the cuisine of Omni Riverfront Hotel
Executive Chef Brett Breaux brings more than 15 years culinary experience to Omni Riverfront Hotel and its Fulton St. Bistro | Bar. A native of Lafayette, LA, Chef Breaux has an extensive French Cajun cuisine background as chef/owner of his family’s renowned Café des Amis in Breaux Bridge and general manager at Prejean’s Restaurant in Lafayette.
Breaux served at the helm of notable New Orleans hotel restaurants including Hilton New Orleans Airport Hotel, Ritz-Carlton Amelia Island, Fla., Ritz-Carlton New Orleans, and Windsor Court New Orleans and its flagship restaurant, New Orleans Grill Room.
Breaux got his culinary start in his family’s Cajun restaurant, and its influence adds a new dimension to the French bistro menu at Fulton St. Bistro | Bar. Most recently, Breaux served the past four years as chef de cuisine and co-owner/operator at Café des Amis alongside his father, Dickie Breaux. He earned his culinary degree from Delgado Community College’s Culinary Arts program.
Chef Breaux has introduced his daily French Cajun-inspired specials to add to the existing breakfast, lunch and dinner menus each day.
